Ingredients
3 cups Whole wheat rotini pasta
2 Tbs Cilantro, thinly chopped
2 cans of tuna in water, drained
1 Garlic clove, minced
½ yellow, ½ red, ½ orange bell peppers, diced
Salt, to taste
½ onion, thinly chopped
Black Pepper, to taste
1 8 oz can of sweet corn, drained
Crushed red pepper, optional
1 medium cucumber, diced
2 Tbs olive oil
Directions
Boil pasta, drain and let cool (place pasta in refrigerator for 10 minutes to cool down).
While pasta is boiling, rinse and chop all vegetables.
Drain water from tuna.
Combine all ingredients to pasta and thoroughly mix together.
