Ingredients
2 Large Spanish onions (diced)
2 Tbsp fresh garlic (chopped)
3 Tbsp Olive oil
4 Medium Sweet potatoes (peeled, washed and diced)
2 Cans Chickpeas (drained and rinsed)
2 Tbsp salt
2 Tbsp paprika
1 tsp cumin
½ tsp thyme
1 tsp cinnamon
½ tsp cayenne pepper (or 1 tsp if you prefer)
½-1 Green Cabbage (sliced)
Directions
Place diced onions, chopped garlic and olive oil into a soup pot,
Turn heat to low-med stir and cover with lid (approx. 5 min)
While that cooks, peel, wash and dice sweet potatoes then add to onions, stir and cover
(approx. 5 min)
Drain chickpeas and rinse in cold water, add chickpeas to pot and stir (approx.. 5 min)
Add 2 Tbsp salt, 2 Tbsp paprika, 1 tsp cumin, ½-1 tsp cayenne pepper, ½ tsp thyme stir and cook for 5 min with lid
Add 8 cups cold water, turn heat to med, cover and let boil
Once stew is boiling add sliced cabbage, stir, turn heat to low and cook for 35-40 minutes.
