Split Pea Soup
Ingredients
1 lb split peas washed (2 ½ cups) 2 med. Onions diced
3 Tbs olive oil 3 cloves garlic chopped
2 cups chopped carrots 3 bay leaves
1 tsp salt 12 cups water
¼ tsp cayenne pepper
Place diced onions in a large pot or dutch oven.
Add 3 Tbs olive oil and cook over med heat for 10 min
Add garlic, turn down heat to med-low and cover with lid for 5 minutes, stir occasionally.
Add washed split peas and stir, cook for 5 min.
Add 12 cups water, stir Add 2 cups chopped carrots, 3 bay leaves, cayenne pepper and stir.
Turn up heat to med-hi and boil. After it boils, turn down heat and simmer covered for 1 hour.
After 1 hr, add 1 tsp salt, stir cook an additional 10 minutes covered.
