Oatmeal Cookies w/ peanut butter, banana & chocolate chips
Ingredients
2 cups Old fashioned oatmeal
3 very ripe banana
2 cups water
3 Tbsp peanut butter (smooth)
2 Tbsp Maple syrup
1 tsp vanilla
½-1 cup semi-sweet chocolate chips
½ tsp baking soda
½ tsp salt
Directions
One day before cook (over med. heat) the 2 cups oatmeal in the 2 cups water with the 2 Tbsp maple syrup. It will be very thick.
Let cool, cover and place in the fridge overnight.
Next day, remove from the fridge and let it come to room temp. (about 30 minutes)
Add 2 bananas, peanut butter, vanilla, baking soda and salt
Combine thoroughly (it will be very thick and try to eliminate chunks of bananas)
Add chocolate chips and combine thoroughly
Refrigerate for 30 minutes
While the mixture is in the fridge, preheat oven to 425 degrees
Remove from fridge, place parchment paper on a baking sheet and dollop desired size of
cookies
Bake for 24 minutes, remove from oven and flip over cookies and bake an additional 8 minutes
Let cookies cool
