Ingredients
2 ½ lb bag of fresh spinach
2 Medium Sweet Onions
1 lb Feta cheese
6 Tbsp Olive Oil
½ tsp Dill
½ tsp Mint
½ tsp Oregano
2 eggs
½ tsp salt
2 sheets #10 Filo dough
Directions
- Preheat oven to 380 degrees.
- Chop onions.
- In a frying pan place 1 Tbsp olive oil and place onions in pan over low-med heat. Cover with lid and let onions caramelize, about 15 min. stirring occasionally.
- In a large pot boil water (enough to cover the spinach), add 1 Tbsp olive oil and ½ tsp salt to water. When water boils add spinach and let cook for 5 minutes.
- After 5 minutes drain water from spinach thoroughly, (squeeze as much water from spinach as possible), place spinach in refrigerator to let cool and continue draining.
- Chop feta into small pieces and place in a bowl. Whisk eggs together and combine with feta, add dill, mint and oregano to feta and combine by hand.
- When onions are browned and caramelized combine with spinach.
- Add feta cheese to spinach and mix thoroughly.
- In an aluminum pan, brush olive oil to bottom of pan.
- Take one sheet of filo dough, unfold and brush with olive oil. Fold filo dough and line the bottom of the pan.
- Add spinach and feta mixture on top of filo sheet.
- Take second sheet of filo dough and brush with olive oil, fold and layer over spinach and feta.
- Cover with aluminum foil, place in oven and cook for 40 min
- After 40 min remove pie from oven, remove foil covering, place back in oven for 1 minute longer.
- Remove from oven, cut, serve and enjoy!
